Creamed Potatoes and Peas
Ingredients:
– 4 medium-sized Potatoes, peeled and diced
– 2 cups Fresh or Frozen Peas
– 3 tbsp Butter
– 3 tbsp All-Purpose Flour
– 2 cups Milk
– Salt and Pepper, to taste
– Optional: Chopped Fresh Parsley, for garnish
Instructions:
1. Cook the Potatoes:
– Place the diced potatoes in a large pot and cover with water. Add a small amount of salt.
– Bring to a boil, then reduce the heat and simmer for 10-15 minutes, or until the potatoes are tender.
– Drain the potatoes and set aside.
2. Cook the Peas:
– If using fresh peas, boil them in water for about 3-5 minutes until tender, then drain.
– If using frozen peas, simply thaw them or cook according to package instructions.
3. Make the Cream Sauce:
– In the same pot, melt the butter over medium heat.
– Stir in the flour and cook, stirring constantly, for about 2 minutes to create a roux.
– Gradually whisk in the milk, continuing to stir until the sauce thickens, about 3-5 minutes.
– Season with salt and pepper to taste.
4. Combine and Serve:
– Gently fold the cooked potatoes and peas into the cream sauce.
– Continue cooking for an additional 2-3 minutes, or until everything is heated through.
– If desired, sprinkle with chopped fresh parsley before serving.
