Creamy Tuscan Spinach and Sun-Dried Tomato Pasta

Ingredients

8 oz penne pasta
1 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
Salt and pepper, to taste
Red pepper flakes (optional)

Cook the Pasta: Bring a pot of salted water to a boil and cook penne pasta according to package instructions. Drain and set aside.
Sauté Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
Make the Sauce: Pour in the heavy cream and bring to a simmer. Stir in grated Parmesan cheese until it melts into a creamy sauce. Season with salt, pepper, and a pinch of red pepper flakes, if using.
Add Tomatoes and Spinach: Add the sun-dried tomatoes and fresh spinach to the sauce, stirring until the spinach wilts and everything is combined.
Combine with Pasta: Add the cooked penne to the skillet and toss to coat in the sauce. Adjust seasoning as needed.
Serve: Serve hot, garnished with extra Parmesan and a sprinkle of black pepper if desired.
