Ingredients:

For the Crust:

1 ½ cups graham cracker crumbs (or digestive biscuits)
4 tablespoons unsalted butter, melted
2 tablespoons granulated sugar

For the Cheesecake Filling:

16 oz (450 g) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
½ cup sour cream
¼ teaspoon ground cinnamon

For the Cinnamon Swirl:

½ cup unsalted butter, softened
½ cup powdered sugar
1 teaspoon cinnamon
¼ teaspoon vanilla extract

Instructions:

Prepare the Crust:

Preheat your oven to 325°F (160°C). Line a muffin tin with paper liners or grease well.
In a bowl, mix the graham cracker crumbs, melted butter, and sugar until evenly combined.
Press about 1 tablespoon of the mixture into the bottom of each muffin tin. Use the back of a spoon or a small glass to flatten. Bake for 5 minutes, then cool.

Make the Cheesecake Filling:

Beat the cream cheese and sugar together until smooth.
Add eggs one at a time, mixing until just combined. Stir in vanilla, sour cream, and cinnamon.
Spoon the filling evenly into the prepared crusts, filling about ¾ full.
Prepare the Cinnamon Swirl:

Beat the softened butter, powdered sugar, cinnamon, and vanilla until smooth.
Transfer the mixture to a piping bag fitted with a small round tip or a zip-top bag with a corner snipped off.
Create the Swirls:

Pipe a swirl of the cinnamon mixture onto the top of each cheesecake, starting from the center and working outward.
Bake:

Bake the mini cheesecakes for 18-20 minutes, or until the centers are set but still slightly jiggly.
Let the cheesecakes cool to room temperature, then refrigerate for at least 2 hours before serving.
