Garlic Butter Steak and Potatoes

Ingredients:

For the Steak:

2 ribeye steaks (or your preferred cut)
3 tbsp olive oil
4 cloves garlic, minced
2 tbsp unsalted butter
1 tsp fresh rosemary, chopped
Salt and pepper to taste
For the Potatoes:

4 medium Yukon gold or red potatoes, cut into cubes
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste

Prep the Potatoes:

Preheat the oven to 425°F (220°C). Toss the potato cubes with olive oil, garlic powder, paprika, salt, and pepper. Spread them in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway through, until crispy and golden.
Prepare the Steak:

While the potatoes are roasting, season the steaks with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the steaks and cook for 4-5 minutes per side for medium-rare, or longer for your preferred doneness.
Make the Garlic Butter:

Lower the heat and add the butter to the pan with the steaks. Once melted, add the minced garlic and rosemary. Spoon the garlic butter over the steaks as they cook for an additional 1-2 minutes.
Serve:

Once the steaks are done, let them rest for 5 minutes. Serve alongside the crispy roasted potatoes, drizzling any leftover garlic butter from the pan over the top.
